Bake-At-Home Empanadas 2 for $15
My mom made and froze these empanadas for me as a quick and easy meal that I could eat one handed after giving birth. I completely forgot about them until one day I stumbled onto them in the back of our freezer while looking for a quick meal. I brushed them with a quick egg wash, popped them in the oven and woah!!! So. Good.
They're stuffed with ham and leek and become irresistibly flaky once baked. They really are the perfect one handed meal... unless of course you're more civilized than me and eat them with a fork and knife. Served with a side salad you get my perfect idea of a meal. A little virtue and a little vice.
INGREDIENTS: butter, leeks, crème fraîche, ham, Gruyère, spinach, basil, parmesan, salt, pepper, flour, puff pastry

Go Green Smoothie
This smoothie is packed with spinach, but the cashews, banana and dates work wonders to transform it into something that is almost treat-like. You'd have no idea it's packed with a slew of vitamins, potassium, iron and heart-healthy fats. Spinach also has a high protein content working to keep you satiated longer. My daughter came up and gave me a hug and thanked me for making her a green smoothie with spinach. What more can I say?!
INGREDIENTS: cashews, spinach, dates, vanilla, banana
Sunny Disposition Smoothie
This is an easy drinking bright smoothie that is sure to remind you of summertime. Packed with mango, which is loaded with Vitamin C and antioxidants, and turmeric, which works wonders on inflammation and skin health, it's as good for you as it tastes.
INGREDIENTS: mango, turmeric, banana, dates, lemon
Chocolate-Covered Almond Smoothie
I wanted to come up with a dessert-like smoothie that also had some redeeming qualities. Naively I thought this would be easy. Wrong. I went through so many trials of this one... I was giving smoothies to everyone I saw in exchange for their opinions! BUT, we ended up with a smoothie I think is delicious. It has the decadence of a chocolate-covered almond with much more redeeming qualities. Hemp hearts are a great source of protein, vitamin E and essential fatty acids and cauliflower is said to support brain and heart health. Have you ever had a chocolate-covered almond that did all that?!
INGREDIENTS: banana, dates, unsweetened cocoa, vanilla, almond butter, hemp hearts, salt, cauliflower
This smoothie is reminiscent of a gingersnap cookie, but with many more redeeming qualities. The ginger and cinnamon add a little pizazz, which is balanced by the banana and vanilla, the chia is added for protein and oats for fiber.
INGREDIENTS: banana, dates, cinnamon, vanilla, ginger, oats, chia seeds
**Please note a high powered blender, such as a Vitamix, is required to obtain a smooth consistency in these smoothies. Many blenders will have a hard time blending ingredients such as dates and kale.**
Granola (1L) $12
I'll admit it, there are a few things that are better store bought than they are when you make them yourself. Chips, ketchup and even boxed brownies come to mind, but, not granola. Never granola. In my opinion making it yourself will always win.
This version is packed with nuts, dried fruit and chocolate and is perfect on top of yogurt, with oatmeal or as a snack on its own.
INGREDIENTS: quinoa, olive oil, dried blueberries, dried cranberries, chocolate chips, large flake oats, chia seeds, hazelnuts, almonds, cashews, cinnamon, salt, vanilla, sugar, brown rice syrup, maple syrup, coconut
Nutella Banana Bread $14
This banana bread may be more dessert like than breakfast like, but we all just survived 2020 so I say it's time to celebrate. Thick swirls of chocolate hazelnut spread are a pretty great way to celebrate if you ask me!
INGREDIENTS: flour, sugar, Nutella, butter, bananas, baking soda, salt, Greek yogurt, vanilla, eggs
Apple Crisp (9") $21
Second to chocolate sweet bubbling fruit under a streusel topping has to be one of the best desserts! The bake-at-home feature allows you to enjoy the crisp straight from the oven - ideally with vanilla ice cream melting on top.
*Serves 3-5 depending on appetite.*
INGREDIENTS: apples, cinnamon, salt, sugar, lemon, nutmeg, apple juice, butter, rolled oats, brown sugar, flour
