This salad is full of bright and crunchy vegetables, hunks of chicken, and a tangy Asian inspired dressing. With all the protein and vegetables it easily makes for a light dinner or a full lunch. But, it's the dressing that really does it for me - I could drink the stuff.
Note: The salad is easily made nut free without the peanuts, which are served on the side.
